Arneis
Yarra Valley 2023
Coombe Farm
Picked early March, the fruit was de-stemmed and immediately pressed to stainless steel tanks. Fermented with no temperature control, the wine was dry within five days then racked to Speidl egg. The wine sat on fine lees for three months, then racked to tank in preparation for bottling. A portion of wine (approx 15%) was permitted to undergo malolactic fermentation and was blended back a week prior to bottling. Unfiltered and unfined. Bottled in July 2023.

Humis Vineyard
This wine is made from 80% Shiraz and 20% Carmenere blending portions of the above two wines. Stored in Speidl egg for 8 months with a single rack and return. The wine is unoaked. Unfiltered, unfined. Expect some sediment in your last glass! Bottled December 2022.

Heathcote 2022
Humis Vineyard
Picked April 2022, the fruit was fully destemmed and tipped into open fermenters. Fermentation took 12 days, with twice daily punch downs. Half the fruit was pressed to old oak following seven days on skins, the remainder pressed to two year old oak after 31 days on skins. 16 months in oak. Unfiltered, unfined. Bottled August 2023.

Thousand Candles Vineyard
Picked in April 2023, approximately 10% whole bunch was added to open top fermenter, remaining fruit destemmed on top. Single daily punch down during 12 day ferment, then pressed to Speidl egg for 10 months. Boise Oak stave added to egg for one month. Unfiltered, unfined. Bottled July 2024.

Picked mid March 2022, approx 15% whole bunch fruit was tipped into open top fermenters, the remaining fruit was destemmed on top. With twice daily punch downs over a 10 day fermentation, half the fruit was pressed to old oak when dry, the remaining fruit spent 27 days on skins. The wine spent 14 months in old oak with a single racking in early September 2022. unfiltered, unfined. Bottled May 2023.
